Carcasse

Carcasse

  1. Presentation: Elegantly served, the dessert beautifully complements Carcasse’s sophisticated ambiance. The classic Dame Blanche is given a unique twist that aligns with the restaurant’s culinary style.

  2. Chocolate Sauce: Infused with coffee, the chocolate sauce is a standout feature. It adds a complex layer to the dessert, marrying well with the vanilla ice cream. The consistency is noteworthy – not too thick, not too thin, with the temperature enhancing its palatability.

  3. Crumble Accent: A touch of salt in the crumble offers an unexpected but delightful contrast. This element plays well with the overall balance of sweet, salty, and bitter flavors, making each bite both intriguing and satisfying.

  4. Taste Palette Balance: The dessert achieves a harmonious balance of flavors. The sweetness of the ice cream, the bitterness of the coffee-chocolate sauce, and the hint of salt in the crumble create a well-rounded and sophisticated taste profile.

  5. Price: At €22, the dessert is priced on the higher end. However, given the quality of ingredients, the culinary creativity, and the overall dining experience at a Michelin-starred restaurant, it aligns with expectations.

  6. Overall Experience: The Dame Blanche at Carcasse is a testament to the restaurant’s ability to elevate classic dishes. The combination of high-quality ingredients, inventive twists, and meticulous attention to flavor balance makes it a memorable dessert, well-suited for the discerning palate.

In summary, Carcasse’s rendition of Dame Blanche is a culinary delight that impressively blends traditional and innovative elements. It’s a must-try for visitors, especially those who appreciate the subtleties of a well-crafted dessert in a fine dining context.

Porte Manger

Porte Manger

Recently, I had the pleasure of tasting the Dame Blanche dessert from Porte Manger, and I’m eager to share my thoughts on this classic treat.

Firstly, the portion size of the ice cream was a bit modest, with noticeably small scoops. While I appreciate the refinement in presentation, a slightly more generous serving would have elevated the experience.

The highlight for me was undoubtedly the fresh chocolate sauce. It was a true delight with its perfect consistency – neither too thick nor too runny. The sauce was rich in flavor and generously poured, making each bite a decadent pleasure. This aspect of the dessert was a standout, demonstrating great skill in balancing taste and texture.

As for the ice cream itself, it was pleasant but didn’t quite reach the heights of extraordinary. The texture was smooth, and the quality was evident, but it lacked a certain ‘wow’ factor in flavor. A bit more intensity or a unique twist to the classic taste would make it more memorable.

In summary, the Dame Blanche from Porte Manger offers a delightful experience, particularly with its exquisite chocolate sauce. A few tweaks to the ice cream could transform this dessert from good to exceptional. I’d recommend it to anyone who enjoys a classic, well-made dessert with a touch of elegance.

les Petits Onions

les Petits Onions

As a discerning food critic, my visit to les Petits Onions was highlighted by their rendition of Dame-Blanche, a classic dessert that demands both simplicity and finesse. The experience was a dance of textures and temperatures: the ice cream, a solid 8 out of 10, was rich and creamy, providing a perfect backdrop for the main event – the chocolate.

The chocolate sauce, not too warm, draped itself over the ice cream with a smug elegance. It’s here that les Petits Onions sets itself apart, using Callebaut chocolate, whose robust flavour profile was unmistakably present in every bite. This choice elevates the dessert from mere sweetness to a complex, luxurious experience.

However, the dessert’s presentation was functional, yet uninspired – a missed opportunity to showcase creativity. Similarly, the serving bowl, while practical, lacked the finesse one might expect at this price point. At €10.50, the dessert teeters on the edge of being overpriced, yet the quality of ingredients and the balanced ensemble of flavors justify the cost to some extent.

In summary,  les Petits Onions’ Dame-Blanche is a delight for those who appreciate the nuanced flavors of high-quality chocolate paired with perfectly churned ice cream, though a touch more innovation in presentation could make it truly exceptional.

Lagaar

Lagaar

Indulge in a symphony of flavors with our Dame Blanche, where vanilla is not just vanilla but a crunchy delight. Our unique blend of powdery crunch with chocolate pearls elevates the simple to the sublime. Drizzled with a classic chocolate sauce that cascades over the delicate vanilla, each spoonful is a testament to our commitment to quality and taste. And, for the perfect finish, a dollop of separately served whipped cream to swirl in as you please. This is not just a dessert; it’s an experience designed to charm the senses.”

Wasserette

Wasserette

Having frequented numerous establishments in my quest for the ultimate Dame Blanche, Wasserette has become a place I find myself returning to time and again—possibly more than any other restaurant. Their take on this beloved dessert is simple yet indulgent. The presentation boasts a generous scoop of creamy ice cream, nestled in a bowl and lavishly drenched with a rich chocolate sauce that perfectly complements its cool counterpart. But what truly elevates the experience is the whipped cream—light, airy, and bursting with flavor. It’s the cherry on top of an already delectable treat. Beyond the dessert, the warmth and friendliness of the staff make every visit feel like a homecoming. Highly recommended for both Dame Blanche enthusiasts and those looking for a cozy dining spot with a welcoming ambiance.

BONK

BONK

Amazing home-made icecream, somewhat yellowish (are they using “real / non-supermarket” eggs?). Portion is for two people. They add both chocolate sauce as well as caramel so you can choose or mix as you wish. On top there is a generous serving of bresilienne nuts and speculoos crumble.
